Seafood Gumbo
Ingredients
- Cajun Spices - Ground white Pepper, Garlic Powder, Onion Powder, Sweet Paprika, Ground Coriander, Ground Cumin, Ground Ginger
- 74 ml red tobasco
- 6 onions finely diced
- 2 tablespoons butter
- 1 ltr tomato puree
- 375 ml fish or chicken stock
- 2 tablespoons worcestershire sauce
- 3 ripe tomatoes, chopped
- 200 gms sweet potato, roughly chopped
- 2 carrots, peeled, coarsely chopped
- 1 stalk celery, coarsely chopped
- 1 red capsicum, sliced
Combine onions and butter in saucepan and lightly brown over medium heat. Stir in Cajun Spices (a teaspoon of each).
Add sweet potato, carrots, celery, red capsicum, chopped tomatoes and simmer for 20 minutes.
Add tomato puree, stock, and tobasco to taste. Simmer on low heat for 1 to 2 hours before adding seafood of your choice.
Serve immediately once seafood has cooked.
