I'm starting this brand new section with the a few of basics in fish handling and preparation - like how to fillet a fish - and over the next few weeks we'll progressively bring on-site more cooking tips, and great recipes courtesy of some of the award winning chefs that grace our local restaurants.

Cairns arguably has the largest commercial fishing fleet of any port in Australia based here and product worth hundreds of millions of dollars is harvested each year. From prawns, calamari, barramindi, coral trout, Spanish mackerel or tuna, and many other tropical reef and estuary species, oysters and crays, everything a seafood lover could desire can be purchased and cooked in the comfort of your own holiday accommodation.
